Beef Enchiladas
Ingredients:
1 pound of hamburger meat
1 large can of enchilada sauce (I use Old El Paso)
1 can of mild Rotel
1-2 bags of fiesta blend shredded cheese
1 pack 8" tortillas
(I use almost all Great Value brands)
Brown your meat and drain the grease. Then drain the juice off of your Rotel and add them to the meat. Take a couple of handfuls of your shredded cheese and let melt all together.
Then the top and bottom
Once your tortilla is all folded you are ready to place them all in your baking pan. I use a glass pan but you can use anything that's nonstick (I always use nonstick spray)
I usually have enough meat mixture to pour over the top of my wraps
Add your cheese next. My husband likes a lot of cheese so we use 2 bags ;)

Once your cheese is melted and your filler is ready to go, cup a tortilla in your hand and add 1-2 spoonfulls of your meat mixture.

Bake at 350* for about 25 minutes or until your cheese is nice and gooey!
