Meal Plan Madness

Okay…so Kathryn and Easton came to play yesterday and we got to talking about meal plans. She does one and I want to start doing one so she gave me some great tips! She takes her calculator and stick to a budget. So while she was over she helped me pick out some recipes and then we checked the kitchen and marked off what I already had (which is the biggest mistake people make and I’m guilty of it!) and made my shopping list. So for 5 meals (Sunday-Thursday), cleaning supplies, diapers, etc. I only spend $106! I was so proud of myself! The cleaning supplies and diapers will always increase your total so I was really pumped! So here’s my menu for the week!

Sunday

Mimi Sue’s Chicken Spaghetti, Salad, and Dinner Rolls

I usually cook a large meal on Sundays and we all sit down and relax. It’s a nice tradition to have! This recipe usually makes a large pan so I bought some covered tins to freeze some for later. With it just being the 2.5 of us we don’t need that much and I don’t want to waste any…so this way we can have something to just pull out and cook another night.

Monday

Slow Cooker Ziti, Salad, and Garlic Biscuits

A New recipe from my 1001 Slow Cooker Recipes book found here. I paid $5.00 for this book and it’s been worth it! This recipe is something that I can prepare the night before and leave in the fridge. Then the morning I want to cook it just pop it in the crock pot and viola!

Tuesday

Parmesan Crusted Tilapia with Oven Potatoes

This is a new one we’re trying. My parents are coming as well so I hope it’s good! Oven potatoes are my rendition of chopped red potatoes smothered in spices and butter or EVOO (extra virgin olive oil), cover, and bake. Yum!

Wednesday 

Oven Baked Sweet & Sour Chicken with Lomein Noodles

This is a new one for me also but Kathryn has made it before and says it’s FINE so I’m trying it!

Thursday

Salsa Chicken with Mexican Rice

I’m trying a pineapple and peach salsa this time. I usually just use thick and chunky and smother the chicken, add a little water, and come home to heaven in a crock pot but I wanted to mix it up. I have L.I.G.H.T. (my monthly ladies meeting at church) so I wanted to make something easy for Jason to finish for him and Landon. I also have Zumba after so I probably won’t even get home until 10ish.

I usually leave the weekends open. We usually got to my parents one night or we grill out with friends or maybe get a date night! And here in the near future we will start going to the lake! Whoop Whoop! Can’t wait!
