So I had full intentions of showing my cupcake pictures at Christmas but I just never got around to it! They were so cute! I made a ton of them so Landon could take a batch to school, and Jason and I each had some to take to work.
First I made the cake batter. I just followed the box instructions. I decided I wanted some peppermint cupcakes so I made a green and red batch and a red and white batch with peppermint extract.
Then I separated the batter into 3 bowls. I had added red food coloring to one and green to another and left the other white.
I then filled my muffin pan with cup cake papers and then got ready to mix! Just added a couple spoonfuls of each color, took and toothpick and the swished the colors around until they looked the way I wanted them to.
Once that was done I put baked them at 350 degrees until I could poke them with a toothpick and nothing comes out on it (about 15 minutes or so) and they looked great!
I thought they looked SO COOL! And the red and white ones tasted just like a peppermint! I used plain white icing on the tops of them and to the peppermint ones I added crushed peppermint to the top! Yum!
For the ones for Landon's daycare I saw an idea on Pinterest about packaging individual cupcakes in a small plastic cup and wrapping them up and it was SOOOOO CUTE! This was the final outcome!
Sadly, the humidity was SO BAD that night that when I got up the next morning ALL, and yes I do mean all, my pretty cupcakes were melted! One of the times I wished we had had a deep freezer. It's on our agenda but we just haven't been able to get one yet. So needless to say I am going to have to redeem myself for Valentine's Day!
On a happier note, Landon is in that stage where he wants to do EVERYTHING himself! So I have been letting him brush his own hair and teeth at night and I have started letting him in the morning so we don't have a meltdown. (Mornings without meltdowns are always good!)

And we finally decided to put our fireplace to work. Landon likes to crawl on it so we were hesitant but I love a crackling, popping fire on a cold night so we got some accessories and some wood and made it happen!
On that note I hope everyone has warm, snuggly dreams because it's pretty chilly at my house!
